A lactometer works on the principle that the density of pure milk falls within a specific range. When fresh milk is poured into a clean measuring cylinder, the lactometer is gently lowered into the milk. It floats freely, and the reading is taken at the point where the milk surface touches the scale on the instrument. The level at which it floats indicates the milk's density.

If water has been added to the milk, its density decreases, causing the lactometer to sink deeper and produce a lower reading. On the other hand, if solid substances such as starch, sugar, or other adulterants have been added to artificially increase the density, the lactometer records a higher reading than expected. This makes the instrument an important first step in identifying possible milk adulteration.

However, the lactometer alone does not confirm the exact type of adulteration. Temperature, butterfat content, and other milk components can also affect the reading. For this reason, dairy laboratories often combine lactometer results with butterfat and other quality tests before making a final conclusion.

The Kenya Dairy Board encourages dairy farmers, milk traders, and processors to use lactometers as part of routine quality control. By detecting possible adulteration early, farmers build trust with buyers, processors receive quality raw milk, and consumers are assured of safe and nutritious dairy products.
