A milk lactometer is one of the most important instruments used in the dairy industry to check the quality and purity of milk. During agricultural exhibitions and dairy training sessions organized by the Kenya Dairy Board, farmers are taught how this simple device helps identify whether milk has been adulterated with water or contains abnormal levels of solids.
The lactometer works by measuring the specific gravity (density) of milk. Fresh milk is poured into a clean measuring cylinder, and the lactometer is gently lowered into the milk. The instrument floats freely, and the reading is taken at the point where the milk surface meets the scale on the lactometer. Pure milk has a standard density because it contains the right balance of water, butterfat, proteins, lactose, and minerals.

If extra water has been added, the milk becomes less dense, causing the lactometer to sink deeper and give a lower reading. On the other hand, if cream has been removed from the milk, the density increases, resulting in a higher reading. Because temperature affects milk density, corrections are sometimes made to ensure accurate results.

The lactometer test is important because it helps dairy farmers, milk traders, processors, and regulators maintain quality standards. It discourages dishonest practices such as adding water to milk, protects consumers from poor-quality products, and ensures farmers receive fair payment based on milk quality. The test also enables processors to produce safe and consistent dairy products such as yoghurt, cheese, and fresh milk.
Although the lactometer is a valuable screening tool, it is often used alongside other quality tests, including alcohol tests, clot-on-boiling tests, and butterfat analysis, to provide a complete assessment of milk quality. The milk lactometer remains a simple, affordable, and reliable instrument that plays a vital role in safeguarding Kenya's dairy industry and ensuring consumers receive safe, nutritious, and high-quality milk every day.
